Paleo Chicken Pesto Pizza

I really like pizza, which is strange because I really dislike cheese. I know that may sound weird, but it’s true. I’ve always ordered my pizza without cheese, so when I though about how I would make a paleo version all I had to figure out was how to make the perfect crust!

I first thought about just using almond meal, but I wanted to make it a bit healthier so I chose to try a cauliflower/almond meal mixture. If you asked me I would say this is probably one of the best pizzas I’ve ever had, but I’ll let you be the judge of that!   • Homemade pesto
  • 3 cups chopped cauliflower
  • 3 eggs
  • 2 cups almond meal
  • 1/2 tsp garlic powder
  • 1/2 tsp onion flakes
  • Salt and pepper
  • Cooked shredded chicken
  • Lightly sautéed onions
  • Lightly sautéed broccoli
  • Sun dried tomatoes
  • Basil leaves


  1. Preheat oven to 450F
  2. Add chopped cauliflower to a food processor and pulse until it’s reached a rice like consistency
  3. In a bowl combine cauliflower, eggs, almond meal, garlic powder, onion flakes, salt and pepper
  4. Spread mixture out onto a greased cookie sheet, I made two small round pizzas
  5. Bake for 15 minutes
  6. Remove from oven and add your toppings, I covered mine in the homemade pesto and topped with chicken, onions, broccoli, sun dried tomatoes and basil leaves. Read More: How Long Does Broccoli Last In The Fridge?
  7. Bake for another 10 minutes
