INGREDIENTS
- 1 /4 cup palm shortening
- 1 egg
- 1/3 cup honey
- 1 tsp vanilla extract.
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup finely shredded unsweetened coconut
- 1/3 cup dried cranberries
- 1/3 cup dark chocolate chips
INSTRUCTIONS
- Preheat oven to 350F
- In a bowl beat together the shortening and egg until smooth
- Add the honey and vanilla and beat again
- In a separate bowl combine the cinnamon, nutmeg, almond flour, coconut flour, baking soda and salt
- Slowly pour the dry ingredients into the wet ingredients and continue to blend
- Add the shredded coconut, cranberries and chocolate chips and mix until well combined
- Line a baking sheet with parchment paper and scoop large spoonfuls of dough onto the sheet, pressing town into flat circles
- Bake for 12 to 15 minutes
