SUNBUTTER COOKIES

Gluten, grain, dairy AND nut free cookies!  How is that even possible you ask?  Sunbutter!  ie. Sunflower seed butter.  This was a bit of an experiment in the kitchen but I think I’ve come up with something quite yummy.  Hope you enjoy them.

INGREDIENTS
  • 1/2 cup sunbutter
  • 1/4 cup coconut flour
  • 3/4 cup coconut sugar
  • 2 eggs
  • 1/4 tsp vanilla
  • 1/4 tsp salt
INSTRUCTIONS
  1. Preheat oven to 350F
  2. In a mixer combine all ingredients
  3. Spoon into balls, place on a parchment lined baking sheet and press down slightly to flatten them
  4. Bake for 14 minutes
Preparation time: 10 minutes | Cook time: 14 minutes | Number of Servings: 15 cookies
