Well I’ve come to a point in my whole30 zone challenge thing I’ve decided to put myself through that I really need some variety! I love the zucchini pasta so much because it goes great with veggies and any kind of protein, so I decided I needed to come up with a new sauce. Seeing as I wanted to make this zone compliant as well as paleo and Ashley complaint, I went on a hunt for some expert advice. I came across Hey, Joob! and have to say, she’s a genius! This sauce is so simple and quick to whip up. Also, if you’re following the zone diet, add an apple or some fruit for dessert and you’ve got yourself a perfect 3 block dinner for 2 people. Here’s my take on the dish.
INGREDIENTS
- 4 zucchini, julienne peeled
- 9 ounces shrimp
- 1 can diced tomatoes
- 1 avocado
- 1/4 cup fresh basil
- 2 tbsp water
- Salt and pepper
INSTRUCTIONS
- In a pan sauté the shrimp
- In a separate skillet cook the zucchini
- In a food processor blend the tomatoes, avocado, basil, water, salt and pepper
- Once everything is done cooking add the zucchini and sauce to the shrimp and mix until the sauce is heated
