One of my biggest weaknesses in this world is ice cream, and when I decided to cut diary out of my diet it was one of the toughest things to give up. I quickly found out about coconut ice cream and began buying that at the grocery store. I still eat it and love it, but I wanted to find a slightly healthier alternative that I could make at home. This is so easy and you can add different ingredients to make a flavour you like!
INGREDIENTS
- 1 very ripe banana
- 2 squares dark chocolate
- 1/4 cup coconut milk
INSTRUCTIONS
- Cut up banana and freeze overnight (whenever I have bananas that I’m afraid will go bad before I use them I chop them up and put them in the freezer so I’m always prepared when I’m craving this)
- In a food processor blend dark chocolate until its broken into small chunks
- Add banana and coconut milk and blend until smooth
- Eat straight away or freeze until later, but be sure to take it out of the freezer about 15 minutes before you want to eat it













I have to make this when it warms up. How does it freeze? Whenever I’ve made anything similar, after the process the left overs froze harder than a rock. lol’

Yea. If I freeze it for later I take it out a little bit before I want to eat it to defrost.
Question on the coconut milk, are you using the refrigerated coconut milk or the canned thicker variety?
I used the canned just to give it a little creamier texture. You could try the refrigerated kind. Or none at all. Its up to you!
