PALEO CHICKEN PESTO PIZZA

I really like pizza, which is strange because I really dislike cheese.  I know that may sound weird, but it’s true.  I’ve always ordered my pizza without cheese, so when I though about how I would make a paleo version all I had to figure out was how to make the perfect crust!  I first thought about just using almond meal, but I wanted to make it a bit healthier so I chose to try a cauliflower/almond meal mixture.  Considering I’d never made anything like this before I went on a bit of a search and came across Walking for Dummies Paleo Pesto Pizza and thought, I have to make that!  Now if you asked me I would say this is probably one of the best pizzas I’ve ever had, but I’ll let you be the judge of that!  Also, I’ve listed the toppings I’ve used in the ingredients list, but any meat and veggies will do.

INGREDIENTS
  • Homemade pesto
  • 3 cups chopped cauliflower
  • 3 eggs
  • 2 cups almond meal
  • 1/2 tsp garlic powder
  • 1/2 tsp onion flakes
  • Salt and pepper
  • Cooked shredded chicken
  • Lightly sautéed onions
  • Lightly sautéed broccoli
  • Sun dried tomatoes
  • Basil leaves
INSTRUCTIONS
  1. Preheat oven to 450F
  2. Add chopped cauliflower to a food processor and pulse until it’s reached a rice like consistency
  3. In a bowl combine cauliflower, eggs, almond meal, garlic powder, onion flakes, salt and pepper
  4. Spread mixture out onto a greased cookie sheet, I made two small round pizzas
  5. Bake for 15 minutes
  6. Remove from oven and add your toppings, I covered mine in the homemade pesto and topped with chicken, onions, broccoli, sun dried tomatoes and basil leaves
  7. Bake for another 10 minutes

  3. wow This recipe totally surprised me. It was very very good and exceptionally filling. Put other ingredients on top, but overall left me feeling like I’d eaten a pizza!

  4. Made this last night and it was SOOO GOOD!!! I added a bit of extra fresh spinach on top and additional sausage with the chicken for extra protein too. Next step? BACON :) Thanks for this great recipe!
